This is what happens at the end of the week: I desperately search the vegetable drawer, scrounging for something to make into a salad. I found carrots, a green bell pepper, and an old cabbage leaf.
I threw out the cabbage leaf, left the pepper in the fridge, started peeling two carrots and came up with this.
Salad: Shaved carrots, pepita powder (ground pepitas), dehydrated apple (dried apple), fresh basil.
Dressing: tahini, lemon juice, tamari, olive oil (infused with rosemary, turmeric, paprika, garlic, red pepper, lemon peel) blended together
I want to have a dinner party and serve this, but I keep having babies and dinner parties are not in my near future. But someday. And you will all be invited to feast on old vegetables!
